We are always just repeating the first recipes that were ever originated. Someone invented pasta, pizza, falafel, pad thai, all these incredible, unique and delicious things. Why can no one do this now? Why are there NO new epic dishes being created? Why are the best chefs only still making the same dishes with small twists and variations? Ooh, truffle oil drizzle, cardamom-flavor, another exotic creature that sounds interesting. But nothing they create is ever craved by you again later, it just doesn't hit that spot of comfort. Is it that we don't have the social communities anymore that created long, strong traditions around certain foods? Or is it because our need for food in general is slowly dying out as our bodies become lighter, and the only relationship we have to food now is holding onto the memories we made in the past? We keep repeating the same old recipes over and over, the menus are all the same, so predictable. Even the nicest restaurants with the highest level of chefs still work within the same old types of dishes. Let's honor Italian food as being delicious Italian food, and then make something new! How many polenta mushroom dishes are we going to keep masquerading as new and inventive? Or Asian fusion with avocado and mango salsa, maybe even coconut..yeah we get it, it was exciting 10 years ago..what's next?? We are very slow to evolve with our food. Very attached to the old ways in this realm. Because the old tastes of comfort are so strong in our psyche. But that's fine, we can keep pizza, pasta, Thai and Indian for the difficult days when we need some extra comfort. But when we are ready to adventure and go to a modern fusion place we're ready for something radically new! So let's bring it chefs!! So many things to play with outside of the same old burger and taco recipe where you changed a few ingredients to make it seem unique. How about just play with different ingredients, colors and flavors?? How about make dishes that don't have the old, common names? Why do we need more tacos and pasta, why not invent something totally new? Especially with the vegan and raw food cuisine, why do we need to try to make vegetable dishes that copy non vegetable dishes? Why do we have to keep making vegan burgers and raw pasta and pizza? It never really tastes like what you're mimicking and even if it did, why is it necessary? Play with all the many vegan natural food options that come from the earth, and see what new and exiting combinations you can make! It will be yummy without having to sound like a meat or bread substitute. Maybe this is because going vegan is already a big leap for most people, and it's a more gentle transition if you offer types of dishes people are comfortable with. They think people won't trust it unless there is some element of this food that they can relate to. That's understandable, but not everyone is in that boat, so we can still invent something veganly creative for people who are ready to just savor and enjoy the pure and vibrant deliciousness of fruits, vegetables and legumes. Even just from these vegan options there are sooooo many possibilities of inventing. So do we stay in this narrow range of food creation because we're so attached to our old habits and tastes? Many psychological studies show that taste is very strongly linked with childhood memories. Which is why we are so often governed by the intensity of cravings for things we loved in our childhood, especially during stressful times where we really seek comfort. Maybe we have no problem evolving in the realm of technology because it is something totally new for us, so it doesn't have any deep ties to our past that keep us from wanting to progress. And because it's a tool we use from the mind, and it's not attached through our physical senses which links to and elicits strong, deep emotional memories. Imagine if we had really strong memories of using our beloved hand held telephones so much so that we weren't ready to switch to using a cell phone. Some people do actually experience this, and while it's usually subconscious, it takes them longer and sometimes maybe never, to join the next technological trend. But the reality is we didn't have that much time loving each technological invention to develop such a deep attachment to it. With food, we've had centuries and centuries of created memories around the dinner table. Another major difference is utility. The functionality of technology is always improving, whereas the utility of food never changes no matter what kind it is. Food's only purpose is to be eaten, and hopefully enjoyed. But you cannot use it to accomplish anything greater than just getting fed. Still, we are always wanting our art to evolve and grow. We like watching the nutcracker for the 100th time, but we also really enjoy the stimulation and excitement from a new avant garden modern dance piece that pushes the mold. We love another good ol' dependable romantic comedy with the predictable, formulaic storyline, but we're much more impressed and inspired by a bold, boundary pushing, mind expanding, deep film that utilizes advanced technology that we've never seen before. And the really great ones will make a mark and will forever be remembered and referred to as a masterpiece. No remarkable, legendary food has been created since the burger. But food is an art form that involves so many different elements- it's not only an artistic creation to marvel at, it's also a sensory experience, a social event, and of course, a basic fulfillment for survival. Because of this wide range, so much is at stake when we talk about its evolution. We have such an old, complex relationship to food that perhaps it's a bit too much to ask it to change so quickly. But, if we're willing to take more risks in this realm, I think we'll be able to see that it translates on all levels of our society, and we'll be able to take more risks in the way we function as individuals with our personal attachments, and as a collective with our old, outdated beliefs, structures and systems. You are what you eat. I've definitely seen this to be true in my own personal experience. So if we are what we eat, then continuing to eat old, predictable, uninventive food is exactly what we will be.
